How do create a new contact with a double barrel surname without a hyphen when creating a new reservation?

If you are creating  new reservation and need to add a new contact with a double barrel surname and not hyphenate it just click the + icon next to the Booker field. 

This will open a pop up where you can all the details for your new contact/guest. Fill in the details and click Add Individual to save.
